ORGANIC PLANET® Organic Oriental Noodles RECIPES

 

Udon Noodles and Tuna with Wasabi Vinaigrette

Ingredients:

 

  • 2 Servings Organic Planet® Organic Whole Wheat Udon noodles cooked according to package instructions
  • 1  Tbsp Sushi Sonic® Real Wasabi paste,  reconstituted
  • 3 Tbsp Emperor’s Kitchen® Organic Brown Rice Vinegar
  • 1 Tbsp Emperor’s Kitchen® Organic Chopped Garlic
  • 1 Tbsp Emperor’s Kitchen® Organic Chopped Ginger
  • 2 Tbsp grapeseed oil
  • 1 Tbsp Emperor’s Kitchen® Organic Toasted Sesame Oil
  • 2 Tbsp Emperor’s Kitchen® Organic Mansan Tamari
  • 4-6 Cups spinach leaves, washed and torn
  • ¼ Cup red onion, diced fine 
  • 1 Can Albacore Tuna, Solid White
  • 1/3 Cup Italian parsley, chopped fine

 

In a small bowl, whisk the wasabi paste with the vinegar, garlic, and ginger. Slowly add the oil, and continue whisking.
Add the tamari and whisk again. Combine the noodles, spinach, red onion, tuna, and parsley in a bowl.
Pour the dressing over all, and toss lightly.

 

Shiitake-Udon Broth

SERVES 1

 

Ingredients:

 

  • 2 cups water
  • 1 bundle Organic Planet® Organic Whole Wheat Udon Noodles
  • 3-4 Emperor’s Kitchen® Organic Dried Shiitake Mushrooms
  • 1 Tbsp Emerald Cove® Ready-to-Eat Wakame
  • 8-10 half inch cubes of fresh tofu
  • 1-2 tsp Miso Master® Organic Mellow Barley or Traditional Red Miso
  • ½-1 tsp Emperor’s Kitchen® Organic Johsen Shoyu soy sauce
  • ½-1 tsp Emperor’s Kitchen® Organic Toasted Sesame Oil

 

Soak shiitakes ½-1 hr. in 2 cups water. Remove mushrooms, discard stems, and slice. Return to soaking water, add wakame and tofu pieces, and bring to a full boil. Add Organic Planet® Organic Whole Wheat Udon and cook, uncovered, for 5-6 min. or until tender. Remove from heat, dissolve miso in 4 Tbsp warm water and add to pasta. Top with soy sauce and toasted sesame oil, stir, and serve.

 

Soba Nori Rolls

SERVES 3

 

Ingredients:

 

  • 8 oz. (1 pkg.) Organic Planet® Organic Soba Noodles
  • 4 sheets Emerald Cove® Organic Sushi Nori
  • 1-1½ tsp Emperor’s Kitchen® Real Wasabi 

 

Cook noodles according to instructions on package. Drain and spread neatly on a dry towel. Lay one quarter of the noodles side by side across one sheet of nori. Roll up nori as firmly as possible. Repeat with remaining sheets of nori and noodles. Using a sharp knife, carefully slice rolls in half, then cut each half into 3 equal pieces. Add one drop of water at a time to wasabi, until it forms a thick paste. Place noodle rolls along with wasabi on a platter and serve with a dipping sauce.

 

Miso Pesto with Lomein

MAKES APPROX. 1 CUP

 

Ingredients:

 

  • 1 cup tightly packed fresh basil leaves  
  • ¼ cup fresh parsley, de-stemmed
  • 2-4 Tbsp Miso Master® Org Mellow Barley, Mellow White, or Chickpea Miso
  • 2-4 Tbsp Emperor’s Kitchen® Organic Chopped Garlic
  • ¼ cup walnuts or pine nuts, toasted
  • ¼-½ cup extra virgin olive oil
  • 8 oz (1 pkg.) Organic Planet® Organic Whole Wheat Lomein Noodles 

 

Combine the first 5 ingredients in a blender or food processor. Very slowly trickle olive oil through top of the machine with motor running, until desired consistency is formed.
Prepare Organic Planet® Organic Whole Wheat Lomein according to directions on package, then serve topped with Miso Pesto. You may also serve miso pesto with vegetables, as a pizza topping, or stir into soup for a flavorful treat!
