Bonito are members of the Mackerel family. They are processed by first being steamed cooked, then sundried, and finally wood smoked which give these delicious, paper-thin fish flakes a lightly smoked fish flavor. Especially good for soup broth, with noodles, and sprinkled on casseroles.
